I have to confess, I don't cook cabbage very often. But I read somewhere recently that roasting cabbage is the way to go – so I just had to try it! And if you're looking for keto cabbage recipes, you definitely want to try this one!

The inspiration for the sauce came from some free samples from Colman's Mustard. I've used their powdered mustard in all kinds of recipes for years (like my dry rub for steak or my recipe for low carb sloppy joes!) but the prepared mustard is a new-to-me product! It's the perfect bold, hot flavor – and you can get it in a squeezy jar! Colman's have been making mustard products in England since 1814 – they certainly know what they're doing! I figured it would be perfect for making a full-on flavorful sauce for the cabbage wedges!

How to Make Roasted Cabbage Wedges with Mustard Butter Sauce

Cut half a medium cabbage into four wedges and place them in a baking dish. Drizzle them with olive oil and season with salt and pepper.

Roast them in a preheated oven for 30 minutes, turning the wedges over half way through cooking time.

Just before the cabbage is ready, combine butter, prepared mustard, and onion powder in a small saucepan.

Heat over a low heat and whisk together until combined (I used a silicone whisk). Season with black pepper. Note – the first time I made this sauce it split on me! But I just added a splash of cold water, whisked it like mad, and it was perfect!

Transfer the cabbage to a serving platter, and pour the sauce over the top. Garnish with chopped fresh chives.

My non-cabbage-loving husband thought this dish was amazing! Admittedly it was mostly due to the sauce – which he declared should be served over every vegetable – but also the texture of the roasted cabbage wedges was SO much better than boiled cabbage!

Ingredients

  • ½head medium green cabbage
  • 2 tbs olive oil
  • salt and black pepper

  • 1 tbs prepared mustard
  • 1 tsp onion powder
